Suggest a better descriptionPour oil into a proof ceramic baking dish.
Add tomatoes and mushrooms, turn to coat with oil.
Sprinkle with other ingredients and toss (not the Spinach)
Preheat oven to 180?C.
Bake tomatoes just until plump and shiny but not split, about 15 minutes.
Toss spinach though and bake for another 5 minutes
Serve hot or warm with grated parmesan on top Enjoy
Had with Anita & Warren with roast lamb very nice.
18/8/09 made this to night for Baz & I with chilli & lime paste 1/4 teaspoon and Italian mixed herbs with 250 grams fresh mushroom sliced and 5 mintures before taking out I wil put in 500 grams Eglish spinach.
