Preheat oven to 350 degrees. Spray an 8x8 inch baking dish with butter flavored cooking spray. In a large bowl, combine rice, chicken, and chicken soup. Add mushrooms, onion, celery, parsley flakes, pimentos, and black pepper. Mix well to combine. Pour mixture into prepared baking dish. Cover and bake for 45 minutes. Uncover and bake additional 15 minutes. Place baking dish on a wire rack and let set for 5 minutes. Divide into 6 servings.
Serves 6 - Each serving equals:
HE: 1 1/3 Pr, 1 Br, 1/2 Ve, 1/4 Sl, 10 OC

Hints:
1. 2 cups uncooked rice usually cooks to about 3 cups
2. If you don't have leftovers, purchase a chunk of cooked chicken breast from your local deli.
FYI - I purchased the Tyson diced chicken (freezer section of the store) and used it in the recipe.
