Preheat oven to 375 degrees. Coat 9x13 pan with cooking spray. In shallow bowl, combine bread crumbs, tomatoes, and pepper. Spread pesto on the top side of breasts and then dip in bread crumbs. Press to coat evenly. Arrange the chicken, breast side up, in the prepared pan. Drizzle with the reserved tomato oil. Bake for 40 min or until a thermometer inserted in the thickest portion registers 170 degrees and juices run clear.
