Boneless chicken cooked over zucchini, tomatoes, basil and mozzarella
Preheat oven to 400. Lightly oil or use non stick spray on 9x13" baking dish.
Beat egg, water in shallow bowl. Add s&p as desired. Set 2 TBSP bread crumbs aside; pour remaining bread crumbs into large plastic bag. Dip chicken in the egg mixture; then place chicken in plastic bag; shake to coat.
Heat 2 TBPS oil in large skillet over med heat. Cook chicken in skillet til browned, 3 minutes per side. Remove chicken from plan. Add remaining oil to skillet and add zucchini and garlic. Cook over med heat for about 3 minutes or til barely tender. Transfer to the oiled baking dish.
Sprinkle the 2 tbsp. bread crumbs over the zucchini. Top with tomato slices, 2/3 cup mozzarella cheese and basil. Place chicken on top of the zucchini layer. Cover baking dish with foil. Bake about 25-30 minutes or until chicken is done or thermometer reads 165 degrees. Uncover and sprinkle with remaining cheese. Serve with basil garnish.
