Preheat oven to 425?.
In a medium bowl, toss sweet potatoes with olive oil, salt, garlic powder and chipotle chile powder
Spread potatoes on a baking sheet. Avoid crowding so potatoes get crisp. Bake 15 minutes. Turn and bake an additional 10-15 minutes. Ovens may vary so keep an eye on them and be sure to cut all the potatoes the same size to ensure even cooking
These guiltless "fries" are lightly tossed with olive oil and spices, then baked in the oven instead of fried. The perfect balance of spicy and sweet. Serves two as a side dish or one for lunch. I served this with skinny ranch dip on the side
TIPS
I put my fries (sweet potato or butternut) on a cookie cooling rack on top of a cookie sheet to bake -- then they get hot air on all sides and come out crisper
The keys to success for me are a hot oven, plenty of space between so they don't steam, cutting same size pieces, and turning/moving them during cooking
I've made them with cumin and chili powder but never with chipotle powder so I'll have to give this a try. Gosh, they look good with the ranch dip
Ground Chipotle powder is in the spice aisle, if you can't find it chile powder would work.
The sourie, I cut them in half, then take each half and place flat side down and slice it. Then take the slices and cut them into strips.
I use Cayenne Pepper and Cinnamon though. It's a great combination of sweet and hot -- and the kitchen smells fantastic
to make crisp butternut squash fries, cut them the night before and lay them out on cooling trays. It dehydrates them and they cook up crispy
