Mix pork with 1 t water and cook over medium heat in large fry pan until almost done. Add sherry and ground pepper. Stir to mix and turn off heat. Let sit 5 min. Remove to large bowl and return drippings to pan. Cook cabbage, celery and onions over med heat 4 min, add soy sauce, sesame oil and add to pork mixture. Cool to close to room temperature and stir in cornstarch.
Prepare baking sheet by lining with foil and spraying foil with cooking spray. Make eggrolls each with 1/2 cup filling. Seal with water and place seam side down on foil. Should make +/- 12 eggrolls. Spray finished rolls thoroughly and bake 15 min @ 450
Subtitute 8 oz can of chopped water chestnuts or slivered bamboo shoots for celery
