Quick and easy morning treat. A modified version of a classic French dish called "oeufs en cocotte" which means "eggs in pot."
Preheat oven to 390 deg F
Cut the slices of prosciutto in half and cover bottom and sides of 4ea 4oz ramekins.
Place a tomato slice on the prosciutto and sprinkle equal amounts of mushrooms in each.
There is two methods for the eggs
For 2 just crack the egg and place whole egg in ramekin.
For the other two whisk the egg then pour into ramekin.
Salt and pepper to taste, but remember that the prosciutto is salted so adjust to taste.
Place on baking sheet and into the oven and until done (12-15 minutes). Checking once in awhile.
About 2- 4 minutes before complete equally sprinkle cheese over top to melt.
The whole eggs can be cooked to how you like the yolk, firm on top and soft center to firm completely. The eggs will continue to cook after you remove them from the oven.
Garnish with avocado and serve
