Prepare a muffin tray.
Whisk together the sour cream, eggs, parmesan and basil, along with salt and pepper to taste. Divide between 4 muffin tray holes. Bake for 10-12 mins.
Mix the peas, avocado, mint. lemon juice and olive oil in a bowl.
Divide the spinach between 4 plates, spoon the pea mixture on top and crumble over the feta. Serve with a baked egg.
