Eggs cooked in tomato sauce
Preheat the oven to 375 Deg F
Heat Oil in a shallow Flame proof dish.
Sweat Onions until they are soft and golden. Then add the tomatoes and cook on the stove for 10 minutes or until they are very soft. Stir in the chopped basil.
Break the eggs one at a time and slip them into the dish on top of the tomatoes
Season with salt and pepper and sprinkle the paremesan cheese over the eggs. Dot with butter and then cover the dish and back for 7-10 min or until the egg whites have just set and the yokes are still soft.
