Squeeze spinach dry. Melt butter (use stainless steel) and cook shallots.
Add spinach; cook over high heat to evaporate moisture. In mixing bowl add bread crumbs, cream, lemon juice, salt, and pepper.
FISH:
Wash and dry fish; stuff with spinach and lace with string. Brush with melted butter. Place on foil folded so fish may be lifted off pan.
Melt butter and white wine. Baste fish 5-7 minutes. Cook in 400 degree oven for 40-50 minute. Remove fish, reduce sauce, and pour over fish. Can be served with Hollandaise Sauce.
