This is so fun!!
Begin with three layers of phyllo large enough to cover bottom of cheese and continue half way up all four sides.
Begin to wrap cheese, 1-2 layers at a time. Place block of cheese with three layers on bottom in middle of sheet, and wrap like a package. Brush layers with melted butter. Repeat wrapping cheese, turning up then down until there are at least eight layers of dough around cheese. Brush final layer with butter very well, but not too soggy. Place side down that has the original three layers.
Bake 350 degrees for approximately 25 minutes.
