Combine first 6 ingredients (dry bread crumbs, pecans, cornmeal, garlic, sage, cayenne pepper) and salt to taste in a bowl. Whisk in egg white. Place pork slices between two sheets of wax paper and pound lightly with a mallet or other heavy flat object to flatten slightly. Combine mustard and water in a bowl. Dip pork slices in mustard mixture. Dredge in breadcrumbs, shaking off excess. Press breadcrumbs to hold. Place pork in a single layer on an oiled baking pan.
