2) Pierce potatoes with fork, bake until tender and then partially smash potatoes with skin on.
3) cook bacon. Remove bacon and add onions to bacon grease and saute for 5 min. Add salt, garlic, and bay leaf, bacon, and bacon grease with onions to a dutch oven. Add milk, potatoes, pepper, and chicken broth. Bring to a boil and reduce heat. Remove bay leaf stir in parsley(optional) and add cheese.
