Easy Potato Soup
Bake or microwave the 2 large baking potatoes. Set aside.
Melt butter in large saucepan over medium heat.
Add onion and cook stirring occasionally for 1-2 minutes or until tender.
Stir in flour.
Gradually stir in broth and milk.
Scoop pulp from 1 of the potatoes cooked and mash.
Add pulp to saucepan and cook over medium heat, stirring occasionally, until mixture just begins to boil.
Dice the remaining potato as well as the skin from the first one and add to soup.
Heat through and serve.
Top with bacon, cheese, green onions....
