This is a very simple, but delicious way to cook potatoes. These are great alone or as vegetarian tacos. Other veggies can be added to it to your preference such as: carrots, zucchini, bell pepper, onion, sweet potatoes, etc.
Preheat the oven at 375 degrees. Cut the potatoes into bite size cubes. Put them in a bowl. Pour a small amount of olive oil in the bowl, enough to coat the potatoes with a spoon. Sprinkle Herbs de Province (or any other Herb mix), pepper, and salt over the potatoes, and stir it with a spoon. Make sure the potatoes are covered with the oil and seasoning.
Oil a baking pan 9 x 12 or 9 x 9, pour the potatoes into the pan.
Bake for 30-45 minutes or until they are tender. Stir the potatoes every 15 minutes to brown them evenly.
Eat them as a side dish or put them in a warm corn tortilla topped with cheese.
The smaller the cubes, the faster they cook, so always check them every 15 minutes.
