Perfect for any meats, apply in last 10 minutes if grilling/baking to prevent sugar burning. Drizzle the dish(es) with additional sauce before serving to finish the meal. Accompany best with Chardonnay if using fish.
1. Make an onion, pineapple, garlic mixture by pureeing 2 large slices fresh onion, 1 tablespoon minced garlic, and 3 rings of pinapple slices in food processor.
2. Combine water, pineapple juice, Teriyaki sauce (Lawry's brand), soy sauce, and brown sugar in a medium saucepan over medium/high heat. Stir occasionally until mixture boils then reduce heat until mixture is just simmering.
3. Let mixture simmer on low heat for 40-50 minutes or until sauce has reduced by about 1/2 and is thickened, stirring frequently. Makes 1 cup of glaze.
SALMON:
1. Heat oven to 425 degrees Fahrenheit. Coat bottom of pan with olive oil, leaving a thin layer on bottom of pan.
2. Place each cut of salmon (skin side down) into olive oil. Brush each cut with thin layer of sauce using a basting brush. Be careful not to drip over into the pan (the sugar will burn and taste bitter if you do).
3. Bake uncovered for 10 minutes, baste again with sauce and finish baking for 5 more minutes.
ZUCHHINI:
1. Slice thinly and sauté gently in sesame oil until slightly soft, top with drizzled sauce.
2. Serve with toasted sesame seeds and salmon steak, drizzle additional sauce over entire plate. Garnish with pineapple wedge.
This sauce works well with pork, chicken, beef, or fish. Be sure to simmer well (I choose to double the recipe and save some sauce for later).
Making onion rings to go with this as is done in the restaurant (TGIFriday's inspired recipe) did not work out so well in cook times, I would advise the zucchini instead.
