Prep: Line baking tray with aluminium foil. Slice the three bell peppers (one red, one, yellow, one green), and the onion. Slice the sausage into 1/2 inch slices. Pre-heat oven to 400 degrees.
Mix marinade of vinegar, ground mustard, and oregano. Place sliced bell peppers, onion and sausage in bag. Close (zip) bag and cover marinade over ingredients.
Arrange marinade-covered vegetables and sausage in baking tray. Place in over and cook at 400 degrees for 15-20 minutes.
