This is really good and very easy
Preheat oven to 375
Heat oil and saute evertyhing through garlic for 3 minutes (be sure shrimp are dry before you start, esp if they were frozen)
Spoon into 11 X 7 pan coated with spray
Add wine to skillet and cook over low heat til reduced to 1/4 c (about 3 minutes)
Stir in tomatoes and splenda and pour over shrimp
Sprinkle with feta
Bake for 10 minutes
Sprinkle with dill before serving
over pasta or with good bread
This is approximately 6 points per serving (without starch).
Serve over whole wheat pasta; nice to make ww orzo mixed with spinach & cherry tomatoes& lemon juice
Can also make with only 1 lb shrimp and only the large can of tomatoes and serve over linguine for a total of 8 points with the pasta.
10 minutes before you start, begin roasting asparagus drizzled with oil and lemon and leave in til shrimp done (20 minutes total)
