1. Preheat oven to 400 degrees.
2. In large saucepan, cook ingredients over medium heat until thickened, stirring frequently.
3. Combine cooked mixture with Ritz cracker mixture.
4. Spray cookie sheet with nonstick spray and place shrimp. Spoon stuffing on shrimp and sprinkle with paprika.
5. Bake for 20 minutes.
