Baked Swedish meatballs made of things you probably already have in the refrigerator. Adapted from a recipe I found online several years ago and altered. Recommended to be served over rice or egg noodles.
1. Combine bread crumbs, onion, salt, pepper, nutmeg and 3/4 cup milk in a large mixing bowl. Let milk soak into crumbs for a few minutes.
2. Gently stir in ground beef until well blended (can use your hands for this to get a consistent texture) and form into balls about 1 to 1 1/2 inches in diameter.
3. Melt butter in the skillet and cook meatballs for 2-3 minutes or until brown on one side, flip and brown other side for 2-3 minutes.
4. Remove with a slotted spoon to a 2 1/2-quart baking dish.
5. Drain off all but 2 tablespoons of drippings in the pan and the stir flour into drippings. Cook, stirring constantly, until bubbly.
6. Stir in beef broth and cream. Continue cooking, stirring constantly, until sauce thickens and boils for a minute.
7. Pour over Swedish meatballs in baking dish.
8. Bake Swedish meatballs at 350° for 35 minutes.
9. Serve over rice or egg noodles. If necessary spoon a bit of the gravy from the dish over the meatballs.
If you don't have any bread crumbs, simply take a few slices of bread, tear them into smaller pieces and put them in a food processor and pulse until the crumbs reach the desired consistency.
Both soft bread crumbs made by the above method and harder ones like panko can be used, though they produce a differently textured meatball. I would not suggest seasoned breadcrumbs unless you also want the seasoning in addition to what we put in ourselves.
