Heat oven to 450 degrees. Put the pieces of tortilla, pita or bread on 1 or 2 rimmed baking sheets in a single but crowded layer. Bake, undisturbed,until they begin to turn golden, about 15 minutes. Drizzle, brush, or spray with oil.
Turn the pieces over, coat the opposite side with a thin layer of oil, and continue baking until they're golden and crisp, anywhere from 5-15 minutes more. While they're still hot, sprinkle with salt and pepper or other seasoning. Serve immediately with dip, soup, or salad, or store in an airtight container for up to a week.
