Position rack in upper third of oven; preheat to 400F. In 10" nonstick fry
pan over medium high heat, warm 2 tsp oil. Brown cubed sausage 5 minutes.
Drain on paper towel. Warm up additional 2 tsp oil. Cook eggplant 6 minutes.
(Eggplant will soak up oil. Will have to gradually add more oil.) Add salt &
pepper to eggplant.
Add sausage back to pan. Add onions garlic, cooked pasta (al dente),
cheeses, basil, olives & tomatoes. Stir all ingredients.
Cover & bake 25 minutes. Uncover, bake another 5 minutes. Serve while hot.
