Combine oil, sugar, vinegar, paprika, & dry mustard. Whisk until smooth.
Add apples to dressing.
Put spinach, feta, & pecans in a ziplock bag & seal. Shake to mix. Add dressing immediately before serving. Simply add 1/2 cup dressing to salad bag, zip, & shake to coat.
* dressing will keep for several days with apples. It will keep,for a week or more without apples added.
