Suggest a better descriptionHeat oven to 425*. IN a large pot, cover sweet potatoes with 1 inch water and bring to a boil. Reduce heat to a simmer; cook 10 minutes. Drain sweet potatoes and return to pot. Mash with milk, Parmesan, butter and 1/4 tsp of salt.
Meanwhile, pour vinegar into a very small skillet. Bring to a boil and simmer 5 minutes or until just thickened. (Don't over-reduce or vinegar will become sticky and burn.)
Place pork on a foil-lined baking sheet. Season with remaining 1/2 tsp salt and the pepper. Roast at 425* for 15 min. Carefully remove from oven and increase heat to broil. Brush balsamic glaze on pork and broil 2 minutes. Let rest 5 minutes.
Slice pork and serve over sweet potatoes. Scatter walnuts on top and drizzle with remaining balsamic glaze.
