Place a large pan of water on the boil and blanch the green beans for about 5 mins, or until tender crisp. Drain and unless you are using immediately refresh under cold water
Heat the oil in a frying pan and cook the shallots with a pinch of salt and the sprig of thyme over a low heat until they are soft and browned around the edges
Tip in the beans, cook for a few more minutes and add the balsamic
Check your seasoning and serve
