Any type of steak could be used with this recipe.
1. In bowl, whisk balsamic vinegar, garlic, shallots, bay leaf, coriander, and thyme. Slowly whisk in olive oil.
2. Lightly season the meat with malt vinegar, and salt and pepper.
3. Place steaks in a baking dish and marinade in refrigerator overnight.
4. Remove steaks from marinade and drain over grate and cookie sheet.
5. Season again with malt vinegar and salt and pepper.
6. Cut steaks in half if long.
7. Grill steaks for 7-9 minutes. Can also do in pan.
8. Rest meat for 5 minutes and then slice across grain about 1/4 inch thick.
