The sweet of the balsamic plays nicely with the salty of the cheese. Add to that, roasting the cauliflower gave it a nice almost nutty taste.
Preheat oven to 450F.
Toss cauliflower, oil, salt, pepper in a large bowl. Spread out on a large rimmed baking sheet and roast until starting to soften and brown on the bottom, 20-25 mins.
Toss cauliflower with vinegar and cheese. Return to the oven and roast until the cheese is melted and any moisture has evaporated, 10-20 mins more.
