Suggest a better descriptionPreheat the oven to 350F. Butter a 9-by-5 inch loaf pan and line the bottom and 2 sides with parchment. Set aside.
Mix together the flour, baking powder, baking soda, and salt in a medium bowl, using a hand whisk.
In the bowl of an electric mixer, cream the butter and sugar on medium-high speed until light and fluffy. ON low speed, add the eggs one at a time, beating well after each. Add the vanilla. Scrape the bowl and mix for 1 minute more to incorporate any sludge that may have been lurking at the bottom. Add the cereal. As it gets crunched up by the mixer, don't worry if you end up with uneven cereal strands. Alternately add the flour mixture and mashed bananas, beginning and ending with the dry ingredients and mixing only until just combined. Fold in the apricots, nuts, and optional chocolate chips. Pour the batter into the prepared pan and smooth the top with a spatula.
Bake for 50 to 60 minutes, or until the loaf is deep brown and a small knife emerges clean from the center. Cool in the pan for about 20 minutes before releasing the loaf to cool completely on a wire rack.
