Steph Blackwell's recipe
1) ) In the blender:
120 g banana
100 g instant oatmeal
120 ml milk of your choice
1 teaspoon of baking powder
1 teaspoon vanilla extract
1 egg yolk
2 pinches of cinnamon powder
2) Beat the white of 1 egg until it forms soft peaks.
3) Mix blended mixture and beaten egg white together.
4) In a hot frying pan, put a little butter and place 2 tablespoons of the mixture for each pancake. Do not make them too thick because they do not cook well. Turn them as soon as they make little bubbles.
5) Serve them with any of these options, according to your preference:
Fruit compote (blue berries, peaches, cherries, pears, etc.).
Yogurt in the flavor of your choice
Jam and butter
Banana slices and a touch of ground cinnamon
