Combine flour, soda, salt, cinnamon, and baking powder in a smaller mixing bowl, and set aside.
Combine oil, eggs, sugar, and flavorings in a large bowl; beat well. Stir in bananas and apples.
Add flour mixture, stirring just until moistened. Stir in pecans.
Pour batter into greased (use Pam) muffin pan and bake at 400 for 18 to 20 minutes. If you use mini muffin pan then bake at 375 for 11 to 12 minutes.
Always check early during cooking time so the muffins don’t brown too much.
