Peel bananas. Mix all ingredients together, adding bananas last. I like my banana muffins to have texture, so I don't fully mash them.
Preheat oven to 300(F). Spray cupcake pan with baking spray. Fill half way with batter. Bake for 25-30 min.- you should be able to pull a knife out clean if they are done.
Let cool slightly before removing from pan. Makes 24- 30 depending on how full pans are.
