This makes a yummy banana bread. I created this recipe when I was in Sweden.. It's great piping hot out of the oven with butter.
Preheat oven at 350F.
Cream Butter, sugar and vanilla until smooth and light, Add 2 eggs and Bananas beat until fluffy. Mix together dry ingredients and add to banana mixture until just combined. Do not over beat.
Pour into greased bread pan. Bake at 350 for about 1 hour to 1 hour ten minutes or until toothpick comes out clean and it’s brown.
Serve with butter and devour!
Variations: Add mini chocolate chips at the end and cook in muffin tins (about 20 minutes) for
Banana Chocolate Chip Muffins!
Note: When I have bananas that go bad, I pop them in freezer and defrost them when I'm ready to make banana bread or muffins.
