1. Beat the egg, and slowly add the sugar.
2. Combine the flour, baking soda, and baking powder. Add to the egg mixture alternately with the mashed bananas.
3. Add the melted margarine and mix. DO NOT OVER MIX!
4. Bake at 375*C for 25 minutes in greased muffin tins (for dark pans bake at 350*). or for bread, bake at 350*C for 1 hour.
** Can add 1/2 cup raisins, walnuts or chocolate chips.
Can use mini-muffin tins, bake for 10 minutes, makes approx. 36 mini-muffins.
