Best banana bread ever...seriously!
In a large mixing bowl beat butter and sugar with a hand mixer until whipped and creamy. Beat eggs then add to the butter sugar mixture; mix well. Mash bananas and add to above and blend until well incorporated.
In a smaller mixing bowl combine flour, baking soda, baking powder, and salt use a whisk to blend well. Slowly add dry ingredients to banana mixture being sure to combine well but it will be a bit lumpy. Mix in chopped walnuts if using.
Bake for 50-60 mins at 350 F. Test in centre with skewer to make sure it's done.
The key to this recipe is freezing the very ripe bananas then defrosting before use. Pecans or chocolate chips are also also nice substitutions for walnuts.
