Easy and great way to use up bananas on their way out. Tastes great as french toast.
preheat 350F
line loaf pan with foil (like a sling)
butter pan
mash bananas
combine butter & sugar, whisk
add eggs and mix completely
add milk & vanilla mix
add bananas
mix in dry ingredients until barely combined (no flour visible)
fold in optional ingredients
bake 65 minutes (start checking at 55 minutes)
cool on a rack 10 minutes
remove from pan
