Basic banana bread
Heat oven to 350 degrees. Mix the dry ingredients in a bowl and cut in shortening (like you're making a pie crust). Add bananas and eggs to dry ingredients and mix well. Add the optional vanilla extract and/or miniature chocolate chips if you would like. Grease and flour a loaf pan and pour mixture into pan. Bake for 1 hour and remove from oven. Let cool on a wire rack for 5 minutes and then turn pan on its side to remove loaf.
