For some reason, everyone seems to love my banana bread! The secret is the applesauce but be careful! JUST too much and it'll sink to the bottom of the bread and make a layer of mush - not enough and the bread won't benefit from it. But just enough and people will come asking for your recipe! ;0)
Bananas are ready when dk brown, (solid, not spotted).
Heat oven to 350?. Grease 2 (8") loaf pans or 1 (9") loaf pan.
Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla, cinnamon, and nutmeg. Beat until smooth.
Stir in flour, baking soda and salt just until moistened. Stir in applesauce and nuts, (if desired). Pour into pans.
Bake 8" loaves about 1 hour, (9-inch loaf about 1 1/4 hours), or until toothpick inserted in center comes out almost clean, (due to applesauce, toothpick will be slightly moist. If toothpick is completely clean, you?ve overcooked and bread will be dry.) Cool 10 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days. Freezes well.
**Substitution for buttermilk: Mix 1 c. milk with 1 tbsp. lemon juice. Wait 10 min. for milk to sour.
**Bake 24 mini muffins ~17 min, makes 48
**8 mini loaves ~ 30 min, makes 16
**24 muffins ~22 min, makes 24
2012 - Don't substitute for buttermilk. Better with the real deal.
