Preheat oven at 350F
Beat eggs, sugar and oil.
Dissolve baking soda into the 2 1/2 teaspoons of water.
Add in the dissolved baking soda and mashed bananas with the egg mixture. Mix well.
Gradually add in water and flour until well incorporated.
Pour into loaf pan and bake for 1 hour and 20 minutes. (Bake for 1 hour if divided into two loaf pans)
Use the toothpick test to test for doneness. Can add chocolate chips or chopped pecans.
