Emma O'Donnell's recipe
Preheat oven to 350F
Sift together flour, soda, powder and salt. Add the oil buttermilk and banana, beating until it forms a smooth batter. In a separate bowl, beat eggs until thick and foamy. Gradually add the sugar and continue beating until very well blended. Fold the egg and sugar mixture thoroughly into the batter. Pour into two 9" layer pans. Bake 30-35 minutes.
