Suggest a better descriptionPreheat oven to 400 degrees and prepare muffin pan, spraying liners. Add all ingredients to medium bowl except the topping and stir in a mixer. Stir in the desired topping. Mixture is supposed to be more on the dry side, but can add a splash of vanilla soy milk. Pour batter into muffin liners 3/4 full. Bake for 15-20 minutes. Cool and store in fridge.
