These cupcakes are great for kid lunches or just to add some lentils and fibre to your diet.
Pre-heat your oven to 325-350 degrees. You are going to cook longer rather than hotter.
Prepare 2 cupcake pans with non-stick spray or cups.
Mix the dry ingredients in your mixing bowl, and combine with a wise. Add the wet ingredients in a food processor and blend until smooth.
Slowly add the wet ingredients into the dry, mixing to combine. Add your extra milk if the mixture seems too dry. Consistency should be thick, but should pour.
(Quickly) divide the mixture between 24 cupcake cups (2 cupcake pans), using two spoons to get it evenly distributed.
Place in the centre of the oven and cook for about 25 minutes. Rotate halfway, or switch shelves, to ensure even cooking.
I have provided some options that have worked for me. Work to get the batter in the oven as soon as possible after combining the dry ingredients, so you don't lose the effectiveness of the baking powder and soda. You really can't over-spice this one, and be careful to add enough salt and chocolate chips. Cook longer rather than hotter to avoid burning.
