375 degrees for 17-20 mins.
1. Place flour, baking powder, baking soda, and salt in a bowl and whisk to combine; set aside.
2. In a separate bowl, combine sugar and eggs and whisk until well combined and mixture becomes thick and light in color (about 1 min). Add oil, vinegar, and almond milk to mixture and whisk to combine. Add in vanilla extract, mashed banana mixture and mini chocolate chips (use whisk again).
3. Pour flour mixture into wet mixture, and with a wood spoon or sturdy spatula, gently fold the batter until the flour streaks remain. DO NOT OVER MIX.
4. Fill muffin papers to almost full. Bake at 375 degrees for 17-20 mins or until tops become golden brown and tester comes out clean. Take the muffins out and put them on a cooling rack to cool.
5. Enjoy!
The key is to fully mash the bananas. If not mashed fully, a few of the muffins will have pure banana in them. This is not good.
