Suggest a better descriptionIn a large bowl, beat the egg. Stir in the melted margarine, the sugar,
buttermilk, and vanilla. Add the banana, mashing and mixing it with the
back of a fork. Mix in the coconut.
In a medium size bowl, mix the flour, baking soda, baking powder, salt and
cinnamon. Add the flour mixture to the mixture in the large bowl and
gently fold the two together.
Pour the batter into 12 greased or lined muffin tins. Bake at 375 degrees
for 25 minutes.
