Here's a simple recipe and variation of wrapped fried banana with just 3 ingredients: vegetable oil, square wonton wraps, and apple bananas. The wonton wrapper will bring a unique texture and flavor to the dish.
1. Line bottom of shallow tray with waxed paper to use as storage for uncooked, wrapped pieces.
2. Peel then slice bananas lengthwise in half. Larger varieties can be cut into pieces preferably no longer than the width of the wonton wrapper. For example, after cutting banana in half lengthwise, cross cut the half pieces.
3. Using a cutting board or flat tray, lay out as many wraps and begin wrapping: With the rounded side of the slice down, align ends of banana slice diagonally to the corners of the wrap. With one open corner fold over and tuck under banana slice; moisten remaining corner with water and continue to wrap diagonally completely over to other corner.
4. Notice that the wrapped pieces are semi-tubular in shape, the banana ends are exposed and the wonton ends will be pointed. Oil will drain easily at the ends and not get trapped if folded over.
5. Arrange uncooked pieces neatly and separated to prevent sticking in storage tray. If layer is full, cover entire with wax paper and continue wrapping as many as you want, separating each layer with wax paper. Any extra uncooked pieces may be frozen but not for prolonged periods.
6. Using a frying pan, fry in shallow oil until light golden brown on all sides. Attn: Place individual uncooked pieces in hot oil with corner seal down first or in a manner to prevent wrapper from opening during frying. Monitor your heat as the frying will generally be less than a minue on each side.
7. Drain pieces on paper towel or your preferred method.
8. Serve immediately before cooling to enjoy the crunchy texture.
9. Suggested serving: As a snack, dust with powdered sugar and cinnamon or drizzle with agave, maple syrup, or your favorite fruit syrup or fruit spread. As a dessert, serve plain with your favorite scoop(s) of ice cream.
Apple bananas (aka Dwarf Brazilian, Nino, Manzano, Latundan, Tundan, or Silk bananas; use search engine for photos) are preferred because their relatively shorter length works well with wonton wrappers. They should be readily available in Asian and Latino markets but may be found in your neighborhood supermarket. I've also observed that this variety will not melt during the frying process provided the fruit is not overly ripe or when there are a lot of black specks on the skin.
You will find that the sweetening condiments as suggested for your choice will cut into and balance the tartness of apple bananas. Of course, let your sweetening creativity take off from this point.
Wrapping is the tedious part of this recipe if using more than 1 pack of wrappers, so help(ers) will make this a fun dish to eat. Imagine what kids would think if they could use the wonton ends to scoop ice cream...
