These muffins are super easy to make, and great for when you have really ripe bananas!
PREHEAT OVEN TO 400 DEGREES. USE CUPCAKE PAPERS OR SPRAY 12 MUFFIN CUPS.
Place the biscuit mix in a large bowl. Combine the egg, bananas, brown sugar, milk, oil and vanilla. Stir into the biscuit mix just until combined. Fill paper-lined or non-stick cooking sprayed muffin cups 2/3 full.
Bake a 400 degrees for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
