Preheat your oven to 350°F
Using a large strainer or sifter, sift the flour, baking soda, cinnamon, nutmeg, and salt into a large bowl
Using a paddle attachment, cream the butter and sugar then add the eggs one at a time, then add the vanilla and smashed bananas and 1/2 cup of the oats
Reduce speed and slowly add the dry ingredients, then add 1/4 cup of the oats
Spray the pan with non-stick cooking spray and pour the batter into the pan.
Spread evenly Sprinkle the rest of the oats on top and sprinkle a handful of chopped walnuts
Cook for 55 minutes or until tooth pick comes out clean
Remove from the pan and place on cooling wrack to cool
Slice and serve
