This is a very tasty variation of the regular loaf of banana bread. The pine nuts add a toasted aspect to the bread as well as the fresh ground nutmeg (found in the bulk section). The cinnamon is just the right spice to add to banana bred in my view. It is also a great herb for our bodies.
Preheat your oven to 400 degrees. Spray your loaf pan with oil and flour. Set aside.
Mix the eggs, sugars, vanilla in a large bowl and mix till creamed. Add the bananas and cream some more.
In a separate bowl mix the dry ingredients. The flour, baking soda and powder,salt, spices and nuts. Mix together well with a spoon. Slowly add to the wet ingredients stirring as you pour. Don't over stir your mixture.
Pour the batter into your prepared loaf pan and put into the preheated oven. Bake 45-50 minutes or until a toothpick comes out clean. Remove from the oven when done. Let sit for 5 minutes and then turn onto a plate or piece of wax paper. Slice and Enjoy with some butter! ?
