This is the Matthews favorite recipe
Heat oven 350'
Prepare 2 loaf pans
Sift all dry ingredients in one large bowl (sugars are wet ingredients)
In another bowl mix all wet ingredients adding the vanilla last
Pour wet mixture into the dry mixture and stir until just combined (do not over stir)
Seperate mixture equally between both loaf pans
Bake approx 30 mins. At 25 mins check on them
As soon as a skewer poked in the center of each pan comes out clean, they are done
Remove from oven and let cool slightly before removing from pans
Let loaves cool on a cake rack completely before topping them with the pecan mixture.
TOPPING:
in heavy saucepan melt butter. Add the brown sugar and pecans stirring continuously. Bring to a boil, continue stirring for 1 minute. Be very careful because this mixture is molton. it can severely burn you.
Seperate by pouring an equal amount over each loaf. Letting it drip down the sides is ok
Let the pecan mixture set up a bit before slicing
These can be wrapped in wax paper and foil and frozen.
