Preheat oven to 425°F. Line a baking tray with parchment paper and spray lightly with cooking spray.
Place the pecans on a rimmed baking sheet lined with parchment paper. Toast the nuts until fragrant, about 3 minutes. Once cooled, chop the nuts into very fine pieces.
In a large mixing bowl, combine 2C flour, 3/4 of the chopped nuts, baking powder, cinnamon, ginger and salt. Whisk together. Grate the butter into the bowl and, using a pastry cutter, cut the butter into the flour mixture until it resembles a coarse meal.
In a liquid measuring cup, place the mashed banana. Add the milk to the cup so that you have 1C of liquids. Pour in the maple syrup and vanilla and mix well.
Pour the banana mixture into the flour mixture and combine with a wooden spoon or rubber spatula. If the dough is too wet, add in the remaining 1/4C of flour. Try your best to not overwork the dough at any point.
Work the dough into a ball as best you can and transfer to the prepared baking pan. Press into a neat 8" disc and cut into equal wedges with a very sharp knife or pizza cutter. Separate the scones and line them on the baking sheet with a little space between each one.
Bake for 15-17 minutes, until lightly golden brown.
While the scones are baking, whisk together the glaze ingredients in a small bowl until smooth and creamy. Let the scones cool for a few minutes, then drizzle the glaze generously over the scones. While the glaze is wet, sprinkle the remaining pecans on top.
