In a large bowl, beat the egg slightly. Stir in the milk, honey, applesauce, and vanilla. Add the mashed banana and combine thoroughly.
Stir in the flour mixture into the banana mixture until just combined.
Line 12-cup muffin tin with paper bake cups and divide the batter among them.
Bake at 375 degrees for 18-20 minutes, or until an inserted toothpick comes out clean.
